While swish electric food processors and blenders are often touted as the ultimate food preparation appliance there is one tool they simply can’t better – the hand operated food mill that was invented almost a century ago!
Chefs generally agree that purees, coulis, sauces and mashes all benefit in terms of texture and taste when prepared with the humble food mill. Unlike the processor or blender a food mill doesn’t introduce any air during the sieving process so the consistency is less whipped and more natural. Secondly, a food mill will remove all pips, seeds and skin effortlessly while the processor will simply grind them all into the mix, which will alter the flavour of the dish.
A new entry to the market is the Savannah Food Mill – a robust, easily operated tool that has three interchangeable discs, each with different sized perforations, to ensure efficient pureeing of everything from denser vegetables, such as potatoes and pumpkin, to tomatoes and more delicate fruits such as raspberries and blueberries.
All the moving parts of the Savannah Food Mill, such as crank, discs and mount, are made from professional grade stainless steel while the bowl is made from high quality plastic. The mill’s ergonomic design includes integrated arms that fit snugly to a bowl or receptacle – a clever way of negating the need for the user to juggle holding the mill in one hand while turning the crank with the other.
The coarsest disc, with the largest perforations, virtually grates food so is ideal for heartier cooked vegetables or soft uncooked fruits such as banana or papaya. The medium disc is designed for pureeing pumpkin or producing superbly velvety, creamy mash potato. And the fine grade disc is perfect for preparing a tomato sauce or raspberry/strawberry coulis as it will remove all pips and seeds plus skin. Not only will the texture of the puree or coulis be superior to any prepared by an electric processor or blender but it will also have a more intense flavour – and none of the bitterness or sharpness that can be left by ground seeds or skin.
Another excellent use for the Savannah Food Mill is the preparation of healthy, fresh baby food - that can all be prepared quickly and simply.
Each part of the Savannah Food Mill is top rack dishwasher safe. The utensil carries a five-year guarantee and retails for $34.95.
The Savannah Food Mill is available nationally from leading kitchenware outlets - consumers can call VGM (distributor) on 1800 650 601 for details on local stockists.
